Add approximately 1 tablespoon of your sweetener of choice (e.g. simple syrup) then use a muddler to crush the ingredients. Put one cup of pear juice, a teaspoon of lime juice, ¾ cup of honey, ¼ cup of sugar (or your favourite sweetener), a sprig of fresh rosemary, a small knob of peeled and finely cut ginger and grated fresh nutmeg in a saucepan.
